Olde Dublin Pub Chef Paul is a graduate of the Culinary Institute of Canada class of 1997. He has worked in Halifax for both ‘McKelvies’ and ‘Salties’ restaurants. In 1998 was the head chef for The Olde Glasgow Mill, followed by two terms as Executive Chef at Whisperwood Villa (’99-’02 / ’03-’08). 2005 saw Paul realize a dream and opened and co owned The Maple Grille in Charlottetown. The Claddagh Oyster House and Olde Dublin welcomed Chef Paul in May of 2008. He resides in Charlottetown with his wife Tamara.
